Approves a specific address (spender) to transfer a specified amount of ERC20-compatible tokens on behalf of the token owner. This is a fundamental ERC20 operation that enables complex DeFi interactions, token swaps, and automated contract operations by granting spending permissions to smart contracts or other addresses.

The approval mechanism is crucial for decentralized applications where users need to authorize smart contracts to move tokens on their behalf. This function sets the allowance to the exact specified amount, replacing any previously granted allowance for the same spender. To modify existing allowances safely, consider using starknetTokenIncreaseAllowance instead.

IMPORTANT SECURITY NOTE: Always approve only the minimum amount needed for the intended operation. Consider revoking approvals (by setting amount to "0") after completing transactions to minimize security risks.

This function internally calls sendTransactionToStarknetContractWithContractInfo with the "approve" function and properly formatted parameters, following Starknet's ERC20 interface specification.
